Have Your Potato And Eat It, Too 
Instead of French fries, try a baked potato. They have very few calories or fat, 
and they’re full of vitamin B6, vitamin C, niacin (B3) and pantothenic acid (B5) 
plus minerals such as copper, potassium, iron, and magnesium.  Potatoes have 
a lot of vegetable fiber that may help protect you from cardiovascular or digestive 
diseases and cancer.  They also contain a range of phytonutrients that have 
antioxidant qualities –which may work against free radicals in the body.

Many folks consider potatoes to be a comfort food. The scientific name, Solanum 
tuberosum, supports this notion! The Latin “Solanum” comes from a word that 
means “soothing.” Potatoes are from the solanaceae family, the deadly
 nightshade group, which also include tomatoes, eggplants, and tomatillos.

Go ahead and slice your baked potato into strips, and put a little bit of ketchup on it 
instead of butter or sour cream.  (or try a goofy alternative my dear friend, Elizabeth 
suggests – tomato PASTE!! Less sugar, more concentrated flavor, 
and super-healthy lycophene). It’s delicious! You won’t miss the grease, and you’ll 
save yourself hundreds of calories.

Be sure to eat the skin of the baked potato, too. It’s tasty and carries most of the 
vitamins, fiber, and minerals.
